Pulled Chicken (Crockpot)

 

Ingredients

1.25 pounds organic chicken breasts (trim the fat)
1 onion - sliced
1 jar roasted red peppers
1 packet taco seasoning spread over chicken (or make your own taco seasoning!)
1/2 jar fresh salsa

Totals:

29g of protein
2g of fat
6g of carbohydrates
Based off of 4oz serving

Instructions:

  1. Place ingredients into crockpot, in that order (ie: sliced onions first, then jar of roasted peppers and so on)

  2. Cook on high for 6-8 hours

  3. Shred chicken with a fork

  4. Optional: add 1/2 can black beans, top with avocado (not included in nutrition facts)

  5. Enjoy!
